Yeah, one version I guess.
I checked and a bunch of UK recipes have sriracha mayonnaise. (BBC, tesco, telegraph) a Vietnamese woman in the States has mayonnaise with Maggi in a cookbook I have.
Another:

No mention of it here, but Banh Mi is just the baguette so a sandwich is a sandwich and open to interpretation

It definitely not just a Canadian thing on a bahn mi, could be a Western thing.
But I see in the general description of a banh mi that it can include French ingredients like the baguette, pate, and mayonnaise with chilli.
But whether it is "authentic" or not, it is the best way to have it, for me. Recommend it, you are missing out.

Best thing to have on chips is PEPPERCORN SAUCE

If I wanted something sweet on a burger, it maybe would be carmelised onions, sometimes. A patty melt can be pretty greet.
Ketchup with all that sugar - not for me and I love tomato generally.
I agree about salt and vinegar on chips or Louisiana hot sauce, depends on what they are with.
In parts of the States they have something they call fry sauce which is mayonnaise and ketchup mixed. Not my thing either.
Though sriracha mayonnaise is a must on a banh mi

Used to work for a Belgian firm, fraser. Spent a lot of time there and worked my way through many beer menus. Some quality beers, I agree. Still don’t get the mayonnaise thing though.
